
My Wonderful Cracker Barrel Breakfast Taco Is The Best
After church this past Sunday, my wife Donna and I headed to one of our favorite places for lunch. Like a lot of folks in Texas, we occasionally find ourselves at Cracker Barrel after services because the food is good, the atmosphere is relaxing, and there's always something interesting to look at while you're waiting for a table.

Donna already knew exactly what she wanted. She was going to have to pick between her two favorite meals, the Classic Meatloaf or the Country-Fried Steak with Gravy.
Me? I had something entirely different on my mind. Secretly, I was craving a breakfast taco. The problem was I wasn't at a Mexican restaurant. So I did what I've been doing for several years. I made what I proudly call "The Fearless Cracker Barrel Breakfast Taco."
Now, before anyone sends me a message explaining that this is not an authentic breakfast taco, let me agree with you right now. It isn't, but trust me, it's pretty darn tasty.
How To Make The Fearless Cracker Barrel Taco
First off, start by ordering the "Mama's Pancake Breakfast," and order a side of apple butter and your eggs over easy or over-medium, where you can cut off the egg whites and use them.
Now, the secret starts with a pancake. That's right, the pancake becomes the tortilla. Then I add bacon, a little egg white from a couple of over-easy eggs, and one of my favorite Cracker Barrel items, their apple butter. For me, the apple butter serves as the awesome Cracker Barrel taco sauce.
To finish it off, I drizzle just a touch of sugar-free syrup inside, fold the pancake in half, and enjoy it like a breakfast taco. Yeah, I know, I know it sounds a little unusual. But sometimes the best meals come from experimenting.

Am I The Only Guy Who Does This?
As I was enjoying my homemade Fearless creation, I noticed the gentleman sitting at the table next to us watching with curiosity. A few moments later, he asked me, "Hey man, is it really that good?" I said, "NO... IT'S GREAT!" Then he leaned over to his wife and said, "That's what I'm ordering next time. That looks good."
That made me laugh because maybe I'm not the only one who likes creating custom menu items.
It also got me thinking. Is there something about eating with your hands that guys simply enjoy? Maybe it's why tacos, burgers, pizza, sandwiches, and barbecue are so popular in West Texas. Sometimes food just seems more satisfying when you can pick it up and dig in.
A Great Father's Day Idea
By the time we finished our meal, I was full, happy, and ready to head home and mow the yard. Before leaving, I wandered through the Cracker Barrel store and picked up a Dad Joke book just in time for Father's Day.
